In this episode, Mark travels to New Orleans to meet Kaitlen Gurin, a CIA-trained French pastry chef who runs a charming cottage industry bakery out of her home—through her kitchen window, to be more specific. The philosophy of her work is rooted in understanding the cultural diversity of New Orleans from a native, black female's perspective. Together, they talk about how French pastries may look sweet and delicate but making them is a lot of work—the craft requires a determined spirit and the heart of an artist. These little masterpieces are only as good as what goes in them, so fresh ingredients and a refrigerator that’s up to the task of keeping them that way is paramount.
